Pumpkin Pie is a classic Thanksgiving, Christmas, Sunday dinner treat! This gluten-free and dairy-free take on the classic Pumpkin pie is totally guilt free and honestly, takes totally bomb too. My best advice to you is to just get on board already and bake this pie! I'm not an expert baker in any way, shape or form, but yesterday, I had the strong desire to to bake something. Pie is something I've never attempted but I decided to take on the challenge. I went out and bought the ingredients to make a "clean" version of Pumpkin pie. I got home and just jumped right in to the baking. Let's get started!
This recipe is adapted from Tiffani Amber Thiessen's Pumpkin pie. I just made a few tweaks to make it compliant with my clean living, dairy-free and gluten-free #dietgoals. The changes are as follows: I used a store bought gluten-free crust made of Ginger Snaps (yum!) instead of making my own from scratch. If Tiffani can use a store bought crust, so can I. Right?! Also, I used sweetened condensed coconut milk instead of dairy condensed milk. No gluten or dairy, check and check!
WHAT YOU NEED TO MAKE THIS DELICIOUS PIE:
1 can of pumpkin
1 can sweetened condensed coconut milk
1 teaspoon cinnamon
½ teaspoon vanilla bean paste
½ teaspoon ground nutmeg
½ teaspoon ground ginger
½ teaspoon salt
1 gluten free, 9 inch pie crust
Preheat oven to 425 degrees F and while the oven is heating, make your pie filling. Just mix together all of the ingredients together until it's a nice smooth mixture. I used a hand mixer for this because that's what I could find but I'm sure a whisk would work just as well! Pour the blended Pie mix into your crust and bake the pie for 15 minutes. After the first 15 minutes, you reduce the heat to 350 and let it bake for 35-40 more minutes. Let the mixture cool before serving. When I first took this out of the oven, it was sort of bubbling and did not look like a typical pumpkin pie. After letting it cool (I actually let it cool overnight in the fridge too) it looked much better and tasted AMAZING. This is perfect for non-bakers out there that want to dabble in a easy but impressive looking dessert. I've never made a pie before and this one came out really tasty. And you will feel so, so proud of yourself after creating a clean, guilt free dessert from scratch (mostly). Enjoy!
